Grilled Chicken in Teriyaki Sauce with Chilli Bean Salad [Recipe]

My old oven's broken..

..poor old stuff. So I can't bake the chicken although the original recipe is to bake them. I grilled them instead. And the mother bought the wrong cuts of chicken which are skinny. Maybe it's only Indo's chicken? I've never eaten skinny chicken in Oz. But fortunately it turned out delicious hehee. Oh I use teriyaki sauce instead of satay cause I prefer teriyaki.

Seasoned chicken

So the original recipe is this:


Ingredients:

8 chicken thigh cutlets, skin on
250ml satay sauce (I use teriyaki sauce)
3cm piece ginger, finely grated
4 cloves garlic, crushed
1 lemon, juiced
1 tbs soy sauce
2 tbs fish sauce
1 1/2 tbs brown sugar
2 long red chillies, finely chopped
400g green beans, trimmed
Steamed rice, to serve

Method:

1. Preheat oven to 220 degree. Place chicken, satay sauce, ginger and half the garlic in a bowl. season with salt and pepper, and toss to combine. Place, skin side-up, in a large, shallow ovenproof dish and bake until it cooked through.

As for me, I just seasoned the chicken and drenched them with the sauce on the grill hehee.


2. To make salad dressing, whisk together remaining garlic, lemon juice, sauces, sugar, and chillies.

3. Bring a saucepan of salted water to the boil, add beans, and cook for 2 mins or until tender. Drain. Combine the beans and dressing in a large bowl and toss well to combine.

I also made some scrambled egg and combine it with the beans and the dressing. Just because I love egg hmm.

4. Serve the chicken with the salad with steamed rice.

I love how the dish turned out though. The sauce indeed gave a lovely crust, and I'm surprised that the chicken is juicy still! I also love the freshness of the salad dressing. Make sure you eat it with steamed rice and it'll be perfect. I reckon baked chicken will be better than the grilled one though.
