Mini Strawberry Jam and Nutella Tarts [Recipe]

I don't cook often.

When it comes to cook and bake, I prefer baking something sweet than savoury. I'm not a desert girl, just love to make some. Until now, I've only made some cakes that usually go for my boyfriend, Roo.

Clockwise L-R: Roo's bday cake (cheese sponge cake), steamed choco chips cupcakes, Valentine day gift heart chocolate cakes with ganache.

A few weeks ago, I promised my classmates that I'd bring some cake the next day. So I found a recipe from Coles autumn magz, and I was very keen on making my first custard. Here's the original recipe:

Ingredients:

  • 1 orange
  • 1 cup milk
  • 3 egg yolks
  • 1/4 cup caster sugar
  • 2 tbsp plain flour
  • 2 pkts Coles 12 Pack sweet tartlets

The ingredients

Method:

1. Use a vegetable peeler to cut 2 strips of orange peel about 8cm long and 2cm wide, avoiding the white pith. Combine with milk in a medium saucepan and slowly bring to boil. Remove and discard orange peel.

2. Whisk egg yolks and sugar in a bowl until light and creamy. Whisk in flour.

Top: milk with orange peel, bottom: whisking flour

3. Pour hot milk on egg mixture, whisking constantly. Return mixture in a clean saucepan, and stir with a whisk over low heat for about 2 mins, or until mixture boils and thickens. Transfer to a bowl to cool for 10mins, stirring occasionally. Cover surface with plastic wrap and refrigerate until cold.

Top: custard in saucepan, bottom: covering with cling wrap

4. Spoon custard into the pastry shells.

I made the recipe three times, because my first one was curdled. I put too much flour so the mixture was like pancake mixture. The second time was better, but it was too sweet. The last time was the best one, but I still didn't like it cause it was still floury.  I was afraid the custard will ruin my tarts, so I put some strawberry jams and Nutella on the base of the tarts, just to hide my bad custard hehee.  The tartlets themselves were nice, they weren't too sweet.

When the custard was combined with the jam and Nutella, surprisingly they went along well. I prefer the jam ones because the Nutella ones were too sweet for me.

I guess I'll try again sometime, next time using vanilla as the flavour of my custard.
